I love pistachios, so I couldn’t resist buying a bunch when I saw them on sale the other day. Now that I am inundated with pistachios (I might have gone a little crazy in the bulk section), I figured I would try to make some pistachio nut milk.
Pistachio nut milk has a delicate pistachio flavor. It is excellent when used in just about any green smoothie recipe. It adds a mild, creamy nuttiness to the flavor.
Since I was buying pistachios to eat, I bought the roasted, lightly salted ones. I shelled one cup and rinsed them off before I soaked them to remove all of the salt. Of course, if you are buying pistachios specifically to make nut milk, you can buy the raw or unsalted nuts.
You don’t need a nut milk bag to make this recipe. I use a fine sieve and it works great. It’s easier to clean too.
Pistachio Nut Milk Ingredients:
- 1 cup shelled pistachios
- 4 cups filtered water
Step 1: Soak one cup of pistachios in water for at least five hours.
Step 2: After soaking for five hours, drain the soak water and place the soaked pistachios in your blender with about four cups of water.
Step 3: Blend on high for about 50 seconds or until you don’t have any more nut pieces. I recommend using a high-speed blender (see my blender recommendations) for making this pistachio milk recipe.
After you are done blending, you’ll have a thin pale green liquid with lot of froth on top.
Step 4: Strain the pistachio nut milk through a nut milk bag or use a fine sieve. Collect the pale green liquid in a clean container. Using a nut milk bag will allow you to get more of the milk, but it may be slightly messier.
When using a sieve to strain nut milk, use a spoon to scrape the bottom of the mesh to remove built-up pistachio pulp. Once all of the pistachio milk has been drained, remove the pulp before adding more milk to be strained. You can use a large spoon to press the pulp into the sieve and get more of the milk.
The finished product will yield about four cups of fresh pistachio milk. Store in the refrigerator in a sealed glass container (mason jars are perfect for this) and try to use within a week. Give it a good shake before each use as separation will occur.
