I love making soup in my blender. It’s the ultimate convenience food full of vitamins, minerals and antioxidants. It’s good for you and tastes amazing!

I recommend using a Blendtec blender (or a Vita-Mix) which can make a hot soup from whole food ingredients in just 90 seconds. You can most likely use whatever blender you have on hand, but you might need to chop your ingredients first before adding them to the pitcher. A high-end blender will make a perfectly smooth soup, while a lower end machine might make the soup slightly chunky if you don’t have a high-speed setting.

Recipe

– 4 Campari tomatoes (or 2 plum or 1 large tomato)
– 1 whole carrot
– 4 stalks of celery
– 1 clove of garlic
– 5 sprigs of fresh dill
– Dash of salt and pepper
– Dash of dried basil (optional)
– 1 and 1/2 cup warm or hot water

Blend on high until smooth. If you have a Blendtec blender, hit the “Soup” button. Recipe makes about 3 cups of soup.

Serving Suggestions

This fresh soup goes great with warm, whole grain bread. Pour it over brown rice for a filling, healthy meal. Drink it straight from a mug for a healthy, low calorie snack.
