Homemade Cashew Milk Recipe

I make homemade almond milk all the time. I like to use it as a liquid in my green smoothies. Since I had cashews on hand the other day, I decided to try making cashew milk instead.

Homemade cashew milk tastes just like – mild raw cashews. No surprise there! The consistency is similar to almond milk.

Cashews are very soft so you don’t need to strain them like you do almond milk. This, of course, means that your homemade cashew milk will have a higher fat content than almond milk. Since you don’t strain the milk, you can add more water so that one cup of cashews yield seven cups of cashew milk. You can make it thicker by only adding four cups of water to one cup raw cashews.

Some people I’ve talked to do not soak cashew nuts prior to blending. I recommend that you do this, especially if your blender isn’t top-of-the-line. But if you’re in a hurry, and you’ve got a good blender, go ahead and try the non-soaked, express version.

I was going to use cashew milk in my green smoothies so I didn’t add a date to sweeten, but if you are going to drink it straigh, you might want to add a date or two when you blend it.

Homemade Cashew Milk Ingredients

  • 1 cup raw cashews, soaked for one hour
  • 6 to 7 cups of water (depending on desired thickness)

Directions

Step 1: Place the cashews in a large bowl and fill the bowl with water until the cashews are covered. Cover with a towel and let sit in a cool place for one hour.

Step 2: Place the cashews in a high-speed blender with about 4 to 7 cups of water depending on how thick you want it. For use with green smoothies, I use 7 cups of water. To drink it straight, 4 or 5 is good)

Blend on high for about 50 seconds or until you don’t have any more pieces. If the cashew milk is gritty, blend it a little longer.

Store in the refrigerator and try to use within a week. You will need to stir or shake the cashew milk every time you use it since it will settle. Use as a liquid in smoothies or drink it straight. Use it as you would regular milk.

If you add 7 cups of water to one cup of cashews, each cup of cashew milk will be around 90 calories.
