Coconut Apple Recipe

– Meat and 4-6 ounces of water from one young, Thai coconut
– 1 large Fuji apple
– 2 large handfuls of fresh baby spinach

Blend ingredients in a blender until smooth. Makes approximately 16 ounces.

Meal Replacement Smoothie

This coconut apple recipe provides an excellent base for a meal replacement smoothie. Use the same recipe above but add:

– 1/4 cup cacao nibs (or 1/8 cup cacao powder)
– 2 tablespoons ground flax seeds
– 1 kiwi
– 1/2 bunch parsley
– 1 scoop protein powder (optional)

Calories: 556 (611 calories with protein powder)
Fat: 23.7 grams
Protein: 14.9 grams (26.9 grams with protein powder)
Carbohydrates: 80 grams
Calcium: 41% daily value (DV)
Vitamin A: 183% DV
Vitamin C: 322% DV
