How To Make Soup In A Blender

soup-in-a-blenderDid you know that you can make quick and easy soup in a blender?

I have been making fresh soup with mine every day. Making your own fresh soup is a great way to increase your vegetable intake and add some variety to your lunch or dinner. You’ll get maximum nutrition from whole foods and you’ll avoid all of the preservatives, added sodium and other additives in canned soup.

I recommend that you make the following soups in a Vitamix or Blendtec blender. You’ll want to be sure that your blender will be powerful enough to liquefy the ingredients. For other blenders, you might need to chop and dice the ingredients first to ensure you’ll have a good soup consistency.

Blender Soup Recipes

Soup-Zucchini-TomatoZucchini-Soup

– 1 whole zucchini (or substitute with yellow summer squash)
– 1-2 whole plum tomatoes or 2-3 small Campari tomatoes
– 1-2 stalks of celery
– 1 sliver of red onion (optional, to taste)
– 1/2 – 1 clove garlic, crushed (optional)
– Spices: A dash of dill, some cilantro (fresh or dried). Add a dash of sea salt and pepper to taste.
– 1 and 1/2 to 2 cups hot water.



Soup-Carrot-TomatoTomato-Carrot Soup

– 1 whole carrot
– 1-2 whole plum tomatoes or 2-3 small Campari tomatoes
– 1-2 stalks of celery
– 1 sliver of red onion (optional, to taste)
– 1/2 – 1 clove garlic, crushed (optional)
– Spices: Have fun with this one. Try different variations of Oregano, Basil, Dill, Italian seasoning or even taco seasoning. Add a dash of sea salt and pepper to taste.
– 1 and 1/2 to 2 cups hot water.

Directions

Add ingredients to your blender in order listed and blend on high for about 90 seconds or until blended to a smooth consistency. (If you have a Blendtec blender, hit the “Soups” button.)

This is basically going to be a vegetable smoothie, but not as thick. Use room-temperature water to make a “raw” soup, or hot water to make a hot soup.

I like to use room-temp water and then pour the blended soup over one cup or so of hot brown rice. It makes a wonderful, filling lunch or dinner and the heat from the rice brings the soup to a perfect temperature!

Heating

High speed blenders such as my Vitamix blender can make hot soup by heating with friction. You can either make your soup with hot water, or heat to desired temperature in a sauce pan or microwave.

Make It Chunky

If you want a chunkier soup, simply dice up an additional tomato, celery, red pepper or whatever vegetables you have lying around. After the soup mixture is at the desired temperature and consistency, add the diced veggies and hit the “Pulse” button on your blender a few times to mix it through.

This soup has all of the vitamins, minerals and antioxidants from fresh, whole foods. It is nutritionally superior to any canned and processed soup you’d buy at the supermarket.
