This pumpkin-avocado green smoothie recipe is absolutely delicious! I love adding avocado to smoothies because it lends a thick, creamy texture that makes this smoothie so…smooth!
Avocados are rich in antioxidants that help slow aging and may prevent certain cancers and heart disease. They also provide a healthy serving of plant based fats, along with the omega-3s in the chia seeds.
Pumpkin is a great source of fiber and vitamin A (as beta-carotene). The fat in this recipe (from the avocado and chia seeds) will help facilitate vitamin A absorption.
I only added cinnamon, but you can add other spices like nutmeg or pumpkin pie spice. The great thing about this recipe is that you can change it up with varying amounts of seasonal spices. Also, try raw cacao or vanilla!
Pumpkin and Avocado Green Smoothie Recipe
- 1 banana, peeled
- 1 tablespoon chia seeds, soaked for 10 minutes
- 1/2 cup pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1/4 avocado, peeled and pitted
- 2 cups fresh baby spinach
- 8 ounces homemade almond milk
Start by adding the liquid to your blender (I use a Vitamix), followed by the soft fruit. Add the greens to your blender last. Blend on high for 30 seconds or until the smoothie is creamy.
Calcium: 11% RDA (Recommended Daily Allowance)
Vitamin A: 177% RDA
Vitamin C: 50% RDA
This smoothie is also a rich source of vitamins B1 through B6, vitamin K, copper, magnesium, manganese, phosphorus and potassium.
