This is a richly flavorful raw stuffed pepper recipe without any nuts. I added some avocado to boost the calories and give it some texture, but you can leave it out if you want. I love the mingling of the herbs and spices.

To enhance the flavor, make the stuffing, except for the avocado, and leave it in the refrigerator for an hour. Then add the avocado and stuff the pepper.

This makes one pepper. Simply double or triple the recipe to satisfy your appetite or to serve more people.

Ingredients

  • 1 large orange bell pepper
  • 1 medium zucchini, chopped into small cubes
  • 2 or 3 slices of red onion, chopped into small cubes
  • 1 medium tomato, chopped into small cubes
  • 1/4 cup of fresh cilantro, chopped
  • 1/2 small clove of garlic, minced
  • 1/2 teaspoon of cumin
  • juice from 1/2 lime
  • 1/4 avocado, mashed

Directions:

In a large bowl, mix all of the ingredients except for the pepper. Next, stuff the pepper, grab a fork and enjoy!
