I’ve never had raw beets before, so you can imagine my uncertainty about trying raw beet in a salad. However, I was pleasantly surprised!
I’d never made my own raw beet salad, but I’ve eaten it at restaurants and raw potlucks so I wanted to give it a try.
The apple and beet taste delicious together and the spices give it a little extra kick. It’s the perfect accompaniment to a raw vegan meal (or even a cooked vegan meal).
This makes enough for one or two people depending on how much salad you want.
- 1 medium yellow apple, cut into thin slices
- 1/2 to 3/4 cup beets, chopped into small cubes
- 1/4 to 1/2 teaspoon fresh ginger, grated
- 1 teaspoon olive oil
- pinch of sea salt
In a medium bowl mix all the ingredients. Be careful not to get the beet juice on your clothing as it will stain. Grab a fork and enjoy!
