Fall is in full swing here in Upstate NY! I love this time of year. I love the colder weather, pumpkin carving, hot apple cider, and all the fall fruits.
We carved pumpkins a few weeks ago and my 3-year-old son really got into it. He wasn’t able to actually carve the pumpkin on his own, but he liked to help as best he could and, of course, we roasted up the pumpkin seeds. YUM!!
While pumpkin is the most popular fall flavor this time of year (I swear there is a pumpkin spice flavored EVERYTHING!), there are a other in-season fruits that I crave. One of them is…cranberries!
Cranberries help promote cardiovascular health and help support immune function! This is a great blend to help you fight off colds this winter.
This green smoothie is a bit tart, which I like. You can blend a pitted date if you find it to be too tart for you. I would try it without first.
I like to buy fresh cranberries, which are readily available this time of year. Just toss them into the freezer and you’ll have them anytime you want – even out of season. Plus a small handful of frozen cranberries gives your green smoothie a nice chill.
- 8 ounces (236 ml) water
- 1 cup pineapple, cubed
- 1 apple, cored
- 1/2 cup whole cranberries
- 1/4 small lime, peeled
- 1 scoop plant based protein powder (I like NutriBiotic rice protein powder)
- 2 cups kale, stems removed
Add the ingredients to your blender in the order listed and blend on high for 30-60 seconds, depending on your blender (see my blender recommendations).
Serving size: 1 – This is a meal-replacement.
