In this month’s Green Smoothie Inspirations, Kimberly shares her story of how celiac disease left her severely malnourished and dangerously underweight. After a naturopath put her on a green smoothie regimen, her body was flooded with nutrients that helped it bounce back to a healthy weight.

Green Smoothie Inspiration: Kimberly Woodring – Tijeras, New Mexico, USA
I got really sick two years ago. I lost twenty-five pounds in three months. I only weighed 89 pounds at 5’2″ (158 centimeters). My doctors thought I might have cancer, or a brain tumor and I went through every test possible. They could not figure out what was wrong with me.
I finally decided to try alternative medicine. My new doctor diagnosed me with celiac disease and put me on a green smoothie regimen and told me to stop eating all grains.
I asked my other doctors about my celiac diagnosis. They didn’t think that celiac was the problem, since I wasn’t exhibiting the normal symptoms of celiac, and I had neurological symptoms. I went on the green smoothie regimen anyway, and within a few days, my symptoms improved dramatically. I could function again!
I finally did have a biopsy that confirmed the celiac diagnosis. Green smoothies saved my life!
I have more energy and stamina now. My migraines are gone. My balance returned to normal and I can walk again without trouble. I have gained weight as well. I’m up to 99 pounds and getting closer to a healthier weight.
My doctors were impressed with my improvement. I was no longer severely malnourished. Everyone I see asks me what I am doing they say I look younger. My hair is growing strong and not falling out anymore.
I have noticed that when I stop drinking green smoothies, I don’t feel good. I try and drink three to five per week. They are great for me to take to work. I am a dog groomer and I don’t get normal breaks, so I always have a bottle with me at my station and drink it all day long
I have shared several of my green smoothies with family, friends and co-workers. Some say they feel better, or they lost a little bit of weight. My daughter and her college friends also indulge in smoothies too when they can.
I drink three to four green smoothies per week. Each smoothie is a blender-full – about 32 ounces. My typical green smoothie recipe is:
– 1 banana (I keep mine frozen)
– 1 cup blueberries fresh or frozen
– 1 cup frozen cherries
– 2 tbsp cocoa powder
– 1 tbsp chia or flax or hemp whatever I have on hand
– 1 cup spinach
– 1 cup kale
– 1 cup or more as needed of water or coconut water. (You can use coconut milk too.)
My overall diet is gluten-free and I’m moving toward eating more paleo. I feel best when my diet is grain and dairy-free.
Prior to green smoothies, I never tried kale, collards, chard, etc… I only had romaine or mixed lettuce. Now I love fresh spinach and kale. I grow my own and use them fresh in my smoothies, or I make kale chips in my dehydrator. Who knew greens would be so good?!
I always knew that food was important, but I never considered it as medicine. I guess everything you put into your body has either a positive or negative effect. I am so lucky to have another chance at living a full and healthy life, and to use the bounty of fresh fruits and veggies to heal my body. I love all the different smoothie combinations and flavors I can make in my blender.
